A smash burger starts as a ball of beef pressed flat onto a very hot griddle. Pressing it thin puts more of the beef against the heat, so it gets a hard sear: the Maillard reaction turns the outside deep brown and crispy, with lacy caramelized edges, while the center stays juicy. A regular burger is a thick patty that cooks slower and gets far less of that crust.
Flavor. Smashing gives every patty as much sear as possible: crispy, caramelized edges and a juicy center in every bite. Stack two, three or four and you get even more of that crust. That's the whole idea behind the Mash.
